I just made my first batch of SMBC, due to some recent Crisco disasters with my old buttercream. I think I'm gonna love it, but I have a few questions. Can it be frozen? Can I double the batch without affecting it? How well does it hold up in humidity? I thank all of you experts in advance for your help?

Yum, SMBC is delicious, as long as you make sure to flavor it heavily! If you don't, it tends to taste a little heavy on the butter. But flavored, it has the best texture and flavor, IMO! At the very least, it has to at least be flavored with vanilla if you want it to be "plain" buttercream.

- Yes, you can freeze it beautifully. Just stir to mix when you defrost it.

- Yes, you can double the batch without affecting it.

- We don't have humidity here, so I can't tell you about that for sure
