I am making a white cake for christmas party. I want to use a filling, but not sure what kind to use.

I'd probably go with lemon, but there are so many many choices. Raspberry, Mousse, ganache....www.ladycakes.com has many good recipes.

If you want a fruit filling but don't want to make it, I've used Mackays preserves strawberries and champagne flavor and it is wonderful as a cake filling (I used it with fresh banana). They also make a raspberry flavor and a lemon curd flavor but I have not tried these. You can find them next to the jelly in the supermarket.

strawberry preserves, cream cheese, and a small amount of butter and powdered sugar blended well makes a nice, not overpowering, filling.
