Since so many of you have raved about the success of this recipe, I went to try it today, but found this in the directions for the recipe:

1 kilogram (2.25 lbs.) powdered icing sugar

I don't have a scale to weigh my powdered sugar, so I was wondering if anyone could tell me how much powdered sugar to use in CUPS? Thanks to anyone that can shed some light on this for me...I'm looking forward to making my next cookies with this icing.

How many cups will depend on whether or not you have sifted your powdered sugar.

According to my 2lb bag of C&H sugar it has approximately 7 cups in it... so you will need just over 7 cups. Typically I just use a 2lb bag of sugar and it comes out to the perfect consistency for me... I know I should add in the .25lbs but just the 2 gives me the perfect consistency for what i need.

I pmed her recently to ask about the conversion. She is very helpful and so quick to reply. She told me that if you use a 2 lb bag to simply add an additional 4 ounces (about 1/2 cup). I did as she suggested and it turned out great! Of course I had to add additional water to get it thinned back down so I wonder if it would be the correct consistency for piping and flooding if you didn't add the additional 4 oz. I guess that all depends on what you are using it for! I really liked working with it... it was great!

A 2 pound bag works just fine for me too. In fact, it's always too thick for me to use and I have to thin it out a bit.

This is a bit off topic, but where on earth will I find meringue powder? I've never even heard of it but wanted to try the recipe to do cookie baskets as gifts at christmas. (I'd never seen them before either some of them are adorable!)

Wilton carries meringue powder. You can get it at Michaels or another craft shop that carries decorating supplies. And of course if you have a cake supply store they'll have it as well. Some larger grocery stores sell it as well.

You can get meringue powder at any cake supply store I believe .Also if you have a Michaels or Hobby Lobby, they carry it to ! I never heard of making your own ??

Managed to find some on ebay, don't really live near a craft shop and where I do my weekly food shop didn't have any.

People don't really make their own baskets of cookies? whyever not? that seems strange to me but I prefer to do things myself rather than pay someone else to do it for me.

lancslass, meringue powder is carried next to the powdered egg whites on my baking aisle in the grocery store. Meringue powder is just dried egg whites, sugar, and gum for stability. (I've used powdered egg whites instead of meringue powder before without any problems).

lancslass. If you didnt understand my comment . I meant I never heard of anyone making their own meringue powder ! Everyone makes their own cookies ( lots of people anyway ) Sorry ! If I wasent clear !!!
