Hello everyone,
How long does it take for buttercream to crust so that the Viva method can be used or does it depend upon the recipe?

I use the Wilton buttercream recipe and it usually crusts in 15 -20 mins.

Some b/c's will never crust!
(Meringue b/c's won't.)

It does depend on the recipe. The more fat in the recipe the slower it will take to crust, and there is a point that it won't crust.

It can also depend on the weathrer. If it is very humid it will take a little longer as well.
