I need a recipe to turn huckleberries into filling. Does any one have any ideas on this. For thoes who don't know, Huckleberries are kind of like a wild blueberry but the tast is not the same and they are SSSSOOOOO good. We picked 7 gallons and I want to make a white cake with Huckleberry filling for my hubbys BD next week

I've got blueberries in my backyard, and did this just last week. The proportions aren't exact, so wing it if something doesn't seem right to you.
4 cups washed berries, whole
1 cup table sugar (I like mine syrupy and sweet)
1/2 cup water
1/4 cup lemon juice (cuts the sweetness & brings out the berry flavor)
Dump it all in a pot and simmer it until the berries start to burst. Mash 'em up if you like, too. After it's a nice yummy mess, mix some corn starch, appx 1 tbsp, with about another 1/4 cup of water and dump it in, and simmer until thick. If its not thick enough, repeat the corn starch step; just make sure that you've simmered it at least 10 min to make sure that all the corn starch is dissolved and cooked.
This should work for black/rasp/strawberries too; for kiwi, cut the sugar in half. Peaches and nectarines should be diced into small chunks and cut the lemon juice in half.
