Well, I know it may not look that good but my neighbor is having a birthday and I thought I'd give it a shot. Didn't tell them I would but I figured if it turned out ok.... At any rate, this is my first class cake. We are supposed to come to class with a baked crumb coated cake to decorate.

What I want to make is a chocolate cake with one layer with chocolate mousse filling and one with rasberry seedless jam. I will use the dam technique. Then I want to pour chocolate ganache over it and then do the crumb coating. I have done ganache before (Barefoot Contessa recipe) and not worried about the cake. Should I then just go with white icing or chocolate? Do you think this will come out ok? Hopefully my second class decorations won't be too awful with a teacher to help..... yikes...

oh wow, fancy.

i've never put frosting over ganache like that, so i'm not sure how that would work. if you've done it before and the ganache sets up and doesn't cause a problem, then i would probably go with a darker colored frosting to cover the chocolate.

No...decided not to do the ganache.... I have done ganache when that is all I do. I know it's ok to put fondant over but think I'll skip the ganache.. just do the chocolate cake with a rasberry filling and another layer with chocolate mousse filling. Guess I'll stick with my Wilton class bc..... Thanks though

I was wondering if there was a better way to get the taste of the chocolate mousse and the rasberry together in a cake? this is class 1 , 1st cake....

yeah I dont know how it would work either to put icing on top of ganache. It seems like it would be messy...But I dont know everything!

You can though ice a cake first then pour ganache on top of that. I know that for sure.

But anyway...you could put a thin layer of raspberry jam down, then put the mousse on top of that. or you could do chocolate ganache as filling with the raspberry as a thin layer (if you dont want to have to refrigerate the cake)
