Help! Ideas For Chocolate Mint!

I would like to make a birthday cake for a friend whose favorite flavor is chocolate mint. I think I want to use a rich chocolate cake and for the filling - a mint layer and a ganache layer. I want this to be a flavorful cake rather than really fancy - anyone have a favorite recipe for these, and I'd like to do a silky chocolate icing - like a ganache - but something that makes good borders too. Any ideas for that? I'd love recipes or design ideas. I'm just not coming up with anything great.

What about tweaking the "cookies n' cream" filling with the mint oreos instead of regular? Then do a chocolate cake with chocolate ganache. I'm sure there is mint extracts too that you could add to it in place of the vanilla. definitely would be cause for a sample cake first. icon_biggrin.gif

I make an excellent chocolate mint cake!! It is one cake my friends request the most. I use the chocolate cake recipe from the back of the Hershey Cocoa container - I think this is the best chocolate cake of all times. I then make one batch of basic buttercream, but I melt 1 and a half bags of Andes mint chocolate pieces and mix into the buttercream! I use it for the filling and the icing. I then use the remaining pieces of mint chocolate and decorate the outside!

IT IS MY FAVORITE CAKE!

Millycakes,
I was just thinking the same thing. Use buttercream and chop even finer the Andes candies chips. If you don't have the chips, then just slightly freeze the andes mints, and chop them in your food processor.

I'm sorry, I can't find the recipe I was thinking of ... since we moved, I'm sort of lost when it comes to finding stuff ... still lots of things packed in boxes, stuffed into closets! icon_razz.gif And that's been since April! icon_rolleyes.gif

But I think the suggestion from MillyCakes sounds de-lish! I'd give it a try!

Also, as to your question about ganache-type borders: just beat your ganache after you've poured it on the cake until it comes to a more workable consistency and you've got what you'll need.

Charb31 - I have made more than one run to the Walgreen's at 2:00 in the morning for more mints! I just hate unwrapping those little wafers! icon_lol.gif

Creme de Minthe (liquor). I add 1/4 cup to a chocolate cake mix and it is absolutely wonderful. I chop up the Andes After Dinner Mints and sprinkle them on top. YUM!

I finely crush up the mint oreo cookies and add it to chocolate buttercream. It is really good! The cookies kind of dissolve, so it just tastes like chocolate mint.
