I have never frozen a cake with the filling in it. I have made fresh strawberry filling, and I really don't think it would hurt it to be frozen. Hope someone else can help you better!

i've never frozen fresh strawberry filling but have frozen the sleeve filling on a number of occasions in a cake with no problem. the only thing that i can think of that might happen is the strawberries melting more than the sleeved filling. i'm sure it would just give you a very moist cake and not hurt the taste. like strawberry shortcake
