Caramel, White Choc Mud Cake???

hi im am searching for a really good mud cake recipe, i need a caramel mud, and white choc mud, or even a choc mud that can be substiuted to make caramel and white choc, needs to be moist and strong enought to handle fondant icing, this is so i can expand the amount of cakes i use under fondant, i tried a choc fudge cake and it stayed fresh and moist but just was too light to handle fondant, would really apreciate you sharing recipes with me thanks. beesting icon_biggrin.gif

have you checked out the recipes on here posted by boonenati (I think)? They look like good mud cake recipes I have them saved in my recipe box for a wedding coming up. There's a dark chocolate mudcake recipe and a caramel mudcake cupcake recipe that has some alterations/variations in it for white choc and regular caramel mud.

Hey beesting I have both recipes if you still can't find what you want they both can handle fondant, I've made them for weddings and birthdays. boonenati's chocolate mud cake is great.

Hey, i just thought I'd add, that the temp on my mudcakes is wrong, the temp should be 160 celcius not 180.
I have asked to have this changed, but i dont think it can be done, so whenever anyone asks about my muds or any of my recipes, i like to point this out. If you bake it at 180, the outside will be faar to crunchy.

boonenati, if it's NOT possible to change it; would it be possible to remove it completely and then post the correct one? If not that, then maybe you could post the correct recipe and mark it something like "This recipe includes corrections".
The MMF recipe has the same problem...in that case it's the wrong amount of sugar...

The recipe I have from CC for MMF calls for 8 cups of sugar. Is that not the correct amount?

PS: I've suggested deleting the recipe, but i dont think it can be done.

If you don't mind using cake mixes the ones I do are fine. I just add to the White Wings white choc mud mix

For White choc mud I add 300g of white choc on top of the stuff that comes in the mix and use milk instead of water - these make it a bit more mud cake like

For caramel mud I use the same white choc mix and add 300g of caramel buds, 1/2 cup caramel topping and some caramel flavouring oil.

I get lots of praise for both of these so I must be doing something right!
I also use fondant on them all the time and they always hold up to the challenge!

I would like to try the mudcake recipes, and did a search in the forum for the one with the conversion for U.S. measurements, and can't find it. Any change someone here knows where I can find it? I would greatly appreciate it! Thanks!

Hi beesting

I have posted 2 mud cake recipes on this site and both are moist, rich and dence enough to hold fondant. I've used them with fondant and they have stood up well without any hassels. I used it for the 21st cake in my photos if you want to check it out. made in a 10" square x 2 with ganache filling. Everyone love it and it held up well considering the weather was about 42'C

Good luck finding a recipe to suit and happy decorating.
