Now that my business has grown I am researching buying some new ovens I have 2 sets of GE profile double ovens would like to have a couple small ones to bake cookies and an occasional cake with. I have thought about buying a broil king professional convection oven has anyone used them or do you own one if you do how do they perform. Tell me what you think.

I have no clue about the oven you're looking at but since you mentioned it's convection I'll tell you my thoughts on that. I have a great new Kenmore oven with convection. My sis, who does cakes in AZ had told me that when she used her convection it dried out her cakes. I had to try it myself so did so with a big batch of cupcakes. Cooking faster is great when you're talking about roasting something but for cupcakes it baked so much faster that they were wierd and airy (not even like cake), baked barely to the top of the papers and then sunk way in when they cooled and tasted gooey in the center. My grandaughter and I tried them and then into the trash they went. They weren't salvagable for anything, not even cake balls, which I've never made but can imagine, and they'd be gross!! Okay, that's my 2 cents worth.

I do have a counter top convection oven, it's not that same one but close that I had gotten to do dog treats (prior obsession). I love it! It took me a little time to figure it all out because it wasn't level and I couldn't figure out why my cakes were so uneven. But after figuring that out and turning down the temp on the oven and cooking it a little bit longer I can say it was a good purchase. Hope that helps
