Fondant Cake - Store In Fridge Or No??

OK, so I have a fondant covered cake to make for Sunday, I'm going to make the cakes ahead of time - white cakes with strawberry and cream filling - do I make the entire cake ahead of time decorated and all and then put in the fridge and take out for Sunday OR do I make the cakes and get up really early on Sunday and decorate it for that day??? GEEZ - what do people do that do this for a living and have more than one cake due in a day???

OH - also to decorate on top of the fondant is it better to use buttercream or royal icing?? I just want to put scrolls and a swiss dot pattern on it....

You can refridgerate a fondant covered cake just make sure that once you take it out of the fridge you don't touch it until the condensation evaporates. Since you are going to put it in the fridge I'd use bc to do your decos.

how long does the condensation take to evaporate on average?

It's going to depend on lots of things like size of the cake, temp, humidity but at least an hour if not more.
