Hello fellow CC'ers!
I am wondering about freezing a fully decorated cake. Here is the deal: We are having a church dessert auction next week and the idea is to do a Thanksgiving desserts to help folks with their holiday baking. My question is...if I decorate a cake with all buttercream frosting (no fondant or any such medium will be used), can the person who wins the cake freeze until Thanksgiving? If so, when should they take the cake out? What is the best way to wrap/store the cake so as not to damage the decorations but to guarantee fresh taste? Any other tips about this?

If I had to freeze a fully decorated cake. I would put it in a cake box and tape it up. Wrap the box in 2-3 layers of saran wrap and then 2-3 layers of foil.Take the cake out of the freezer 24 hours before they want to serve it and let it thaw as is for about 24 hours. Then unwrap the box and enjoy the cake.
good question. everything i have heard on here is popping it in the freezer before wrapping just so icing can harden and then once it has crusted well do 2 - 3 layers of plastic wrap then a layer of foil.
Maybe you could auction away the cake but not actually make it until Thanksgiving. That way you can guarantee the freshness
Grocery store bakeries freeze fully decorated cakes all the time, I'd say it definitely can be done. You might want to be careful if you have any dark colors on the cake, though, because I have seen dark colors bleed when they were frozen.

i agree 100%. that is what i was going to suggest also. that seems to me to be the best way so that the cake isnt damaged.
