My First Batch Of Nfsc

This past weekend, I made my first batch of NFSC with Royal Icing. WOW! They turned out great. My wife and kids were quite impressed, both with the flavor and appearance.

These cookies are exactly like the ones my brother and I craved from a local bakery, while growing up. We called them "the smiley face cookies". He's going to be so surprised when I make him a batch for Christmas.

Question - a few of the cookies I baked towards the end sort of bubbled in the middle... is that because the dough was starting to warm up before I put them in the oven?

Yes that happens to mine as well.....My uneducated guess is that the dough has been over worked by the time you get to bake the last batch. Would like to find out myself.

Hmmm, I've made a ton of No fails and have never had that happen. I keep the dough chilled in between batches though. I use the parchment paper technique and it works like a charm. Other than the dough being a bit warm, I have no idea what would cause bubbling. I'm glad you found a good recipe that you like, what a great gift to your brother!
