I am starting on my grooms cake tonight and I am a little confused on what ingredients to use (ie. Cake extender, pudding mix, etc.)

I will be making two chocolate cakes (11x15) and then stacking & carving them. I have 4 boxes of PB devils food cake as well as 4 boxes of instant chocolate pudding. I was planning on doing one of the cake mix extenders from this site, but when I was reading through I didnt see on any of them to use the pudding mixes. I guess I am wondering if I can still use the chocolate pudding mixes or should I leave them out? One of the extender recipes says to use 3 heaping TBSPs of cocoa powder if I am making a choc. cake and the other two dont mention that. So I guess I am asking you all how you would make the cakes? I really want this cake to turn out great!

Also, since I am baking in an 11x15 pan, will two flower nails be enough or should I go and buy another?

Sorry to type so much, I just want to make sure I get this right!!! icon_wink.gif

This is what I've been using. It's super easy and everyone loves it!

I don't use box mixes so I can't help you there. I'm not sure if they will hold up to carving. I do use a delicious chocolate recipe. You can find it on the back of the hersheys cocoa can and it is a nice dense cake that I think carves well.

I made a 12x18 2" cake and did not use any type of core or nail and it baked up fine, so if you are using a could nails it should be fine I would think.

I would not use anything with a pudding in it for carving. You need a denser cake for carving, like a choc pound cake. It is my understanding that PB has pudding already in the mix, if you use an extender plus additional pudding, you may have a real problem with carving.

I understand what you're saying about density. However, I always add another box of pudding to PB. it makes it so much more firm.
