Hi,

I am baking a cake and have to go somewhere and don't have time to bake all of it right now. Can I put it in a storage container and put it in the fridge and bake later tonight or tomorrow??

The batter should be fine for a day or two in the fridge.

The texture will be different. Your batter will rise more while sitting in the fridge and cause your cake to have more holes. I have put my batter in the freezer and thawed it out later for cupcakes. It was not the same as a non-frozen batter. It's fine for personal use, not sure if I would do it for a cake I was selling.

Just take a spoon and beat it a little to "pop" the air holes. Or throw it in the mixer for a second.
