How Long Does Ganache Keep?

I have some chocolate syrup and some ganache in the fridge (one was made by microwaving choc. chips and half-and-half and the other with choc. chips and cream). How long will they keep in the fridge. I hate to make more since the recipe made a LOT, but I don't want it to taste bad or for anyone to get sick either.

as long as its refrigerated and the cream is not to expire any time soon, it will keep for about a week to 10 days. you can also freeze it.

I would agree with Melysa- but it never stays in my fridge that long, if my hubby knows it's there! icon_lol.gif I once found him sitting on the kitchen floor, eating it out of the container. He calls it chocolate crack. icon_rolleyes.gif

Thanks. I like your husband's term for it, albumangel. I sort of agree. Unfortunately, it's been there longer than that, so I will probably get rid of it. I think it's be 2.5 -3 weeks.

I just looked it up in the Cake Bible and she suggests:
1 day room temperature
1 week refrigerated
3 months frozen

or my experience- until family members grab spoons and have at it!

A variation on the question-- I'd assume, then that the whole cake would keep for approximately those times as well? I made the layers late Thursday night and plan to serve various combinations on Monday, Tuesday, and Wednesday. They are in the fridge now. I am waiting to put the buttercream and final layer of ganache on them until probably tomorrow for some, and possibly Tuesday night for the last, and to store them in the fridge. It will be less than a week and I doubt there will be many leftovers on any of them, so that won't be an issue.

First time I played with ganache and had some leftover, I put it in a plastic, lidded container and it got shoved in the corner behind my KA. I didn't see it and found it a couple of days later. Opened that sucker and it looked like a green chia pet!! ewwww!

I just threw the whole container right in the trash! icon_redface.gif

Sheesh-I thought only my hubby does and says these things. I don't even like chocolate. It's a good thing because he eats enough for both of us. I make him homemade brownies when he's extra good icon_razz.gif that he lovingly refers to as "crack brownies".
