If anyone could share the best recipe for making stiff roses. The icing I'm using seems to not hold the rose perfectly. you can't really see the petals that well cause it starts to droop and not stand up.

When I first starting doing roses, I found using the Wilton recipe from the course book with all shortening was the best. I just used it without adding any extra liquids, then practiced a lot. thumbs_up.gif

I use either the Wilton buttercream recipe or Sam's buttercream. If my roses aren't stiff enough, I've added confectioners sugar, cornstarch or even a little flour until I get the desired consistency. I don't know how many other add flour, but I like it because it doesn't make the icing even sweeter.

I not any help on this, because it happens to me all the time too.

So, if someone could please let us know. Does it have to do with the humidity or something. I've tried several things add more meringue powder, adding cornstarch. Doesn't seem to help me they still droop for me to.

I had the same problem. I switched to royal icing roses

I hate roses... LOL

I use stiffy consistancy Wilton and add powdered sugar until I have the consistancy I want.

Then I pray like there is no tomorrow.

I actually need to bust out some practice BC roses because if I don't do them for a week or two I can't make them to save my life when I have to.
