One of my other posts got me thinking about trying to make cheesecake pops (like Neiman Marcus). How would I get the stick to stay in the cheesecake? Would I have to do something special? I understand that while they are frozen, they would stay. But what about once they defrost? Wouldn't the stick come out or the cheesecake slide off? Any ideas would be greatly appreciated. TIA

I would think if you are going to be dipping them in chocolate, you could dip them all the way and even dip until the "top" of the stick is dipped that way once the chocolate hardens all over the cheesecake pop it'll kind of seal the stick in as well because the chocolate will be down on the stick. Think of chocolate covered ice cream bars.... they dip a little below the icecream to seal the stick in... May help icon_smile.gif
