I'm not use to working with fondant at all, I need to make two banners to write on, a giant #1 and a name. How long in advance can I make this stuff and have it look good? and How should I store it until I use it? If anyone could give me some advice I would really appreciate it.

You can make your pieces as far in advance as your little heart desires. icon_razz.gif

Just store them in a cool dry place preferably in a container that is airtight and has not a lick of residue from anything oily.

If you do that, you will be just fine. You want to make sure that you make your pieces far enough in advance to dry completely. thumbs_up.gif

If no one is going to eat the banners you could use Wilton fondant, easy to use.

If you make it, you can make it at anytime, however, if you want it to dry hard, then make the banners a few days in advance.
