I am making a cake for a bride who wants whipped cream filling, so I am using "Frosin' Pride," the stuff sold at Smart and Final. I have to make the cakes a few days in advance and freeze them as I will only have a few hours a day to do this. Can I whip this stuff up and put it in my cake layers and then re-freeze it? Also, she wants fondant, which I will be finishing the night before. Can I leave the cake out over night with this filling? I don't want to refrigerate the MMF. Any help or suggestions would be so appreciated. Thanks.

I'm not sure about the re-freezing after you've whipped up the Frostin' Pride, but I do know that you can leave it out overnight without a problem. It's non-dairy, so it can stay at room temp and be just fine.

Here's a link with other pointers on Pastry and Frostin' Pride...

I use Pastry Pride, also from Smart & Final. I have refrozen it and we've never had any dire results from it. I thaw it till it is just slushy, shake it to combine, pour out what I need and put the rest back in the freezer immediately. It isn't a dairy product, no cream. milk or eggs and from the ingredients listed there are probably enough chemicals and preservatives to keep forever, if it doesn't kill you first.
