No Preservatives

Hello fellow cake decorators. I need some help. I have an order for a cake with no preservatives. I don't know what that means. Any knowledge would be greatly appreciated. A great recipe for the cake would be needed also.Thanks in advance.

I would think that would mean no cake mixes - which have preservatives so they can be stored for an extended period.

If you made a scratch cake it would have no preservatives, if you used a traditional recipe. Meaning no convenience, pre-packaged ingredients like instant pudding, dream whip, Cool Whip, etc.

Is that all they mean by no preservatives? I thought no preservatives had to do with the flour you use. The lady said something about bleached wheat flour. Would it have anything to do with any of the other ingredients?

It means you must make the cake from scratch and look at all the ingredients used to make to make sure that they don't contain persrvatives. You must use unbleached flour also. My bestfriends daughter is highly allergic to citric acid which is used as a perservative. When I made cupcakes for her birthday I read many labels trying to buy the right ingredients.

I was speaking, in general.

Your customer sounded like someone who was health conscious, and didn't want trans fat, and/or all the other unpronounceable stuff in cake mixes.

If someone comes to you with a special request because of allergies, restricted diet, etc.; it is imperative that you get all the restrictions or particulars from them (as they know their condition's requirements).

I would hate to think that someone got sick because of an answer posted in a cake decorating forum.

I'm a scratch wedding cake maker. Nothing I use has perservatives or trans fats. This can be very time consuming and you would have to charge alot for the cake.

If you need help with recipes etc. I can help get you some recipes. Scratch baking takes alot of time to learn, especially when you start making the larger cakes.

Thanks alot ladies. The lady actually asked my sister if I could do 24 cupcakes with no preservatives. I wasn't sure what that meant. I'll talk directly to the woman and see what she means. Thanks for all your help icon_biggrin.gif
