I'm really excited to be trying my first cut-out cookies. I've done tonnes of reading and can't wait to get to the decorating part.

I just mixed up a single batch of the Penny Recipe and it's soooo sticky.
It's in the fridge now - but the recipe said I didn't need to chill it.

I tried rolling it between parchment and even that was sticking to the dough.

Any suggestions?

Also - what is the trick to rolling out the dough in a uniform thickness?

I luv Penny's recipe, it's really yummy. I've rolled it out using flour on both the pin and surface. I bake my cookies on a silpat so I usually roll it out right on a floured silpat and cut out the cookies removing the extra dough. I make sure to leave some space between the cookies. It does not spread that much but there definitely is some spreading. I found this to be the easiest way in order to maintain the shapes of the cookies, otherwise I end up with globs.

Have you ever tried using all vanilla instead of the vanilla/almond combo?
I'm not a huge fan of almond extract. I made them as per the recipe for the 1st time - but would like to experiment with my next batch.

I've used all vanilla or a vanilla/lemon combo. I usually bake for kids and you never know about the nut allergies.

Also, if you don't want the cookies to spread place the whole cookie sheet into the freezer for about 10-15 minutes.

I made this one time and mine came out really sticky and even when I chilled it, it was still too sticky to roll out....MY problem: I used too much butter. It was "just one of those days" and I had already put 1 cup in and in the midst of chatting along on the phone put another cup in. icon_redface.gif duh!

The cookies tasted "okay" but they were toooooo buttery ---even for Paula Deen. icon_lol.gificon_lol.gif My husband said those cookies gave him the "butter sh!ts"


I haven't tried the recipe again but NEXT time I will stay off the phone.

I ended up chilling some of the dough until this morning and they worked much, much better.

I tried Toba's glaze this morning too. I made a huge mess. There is coloured glaze on every surface in the kitchen, but I had tonnes of fun. Can't wait to try again soon.

Did you outline the cookies before you flooded them? I need to find the best way to do this. Your cookies are great. Any instruction you could give would be GREATLY appreciated. thumbs_up.gif

Gosh - I'm such a newbie at this I'm not sure I should give advice but I'll tell you what I did. I made the Toba's Glaze recipe and I added more powdered sugar to stiffen it up enough to outline. I used tip 5 to outline. I tried a 2 like I read somewhere but it didn't look the way I wanted it to. I let the outline sit for about 15 minutes and then thinned down the icing again with milk to flood them. I used a number 5 for flooding as well. I made a huge mess as the glaze ran out quickly.

Next time I will make the glaze well in advance so the bubbles have a chance to escape. I can see some on my cookies.

I suspect I put the glaze on way too thick though. I think they will take forever to dry enough so I can package them.

I'm not over the moon about the taste. They are super sweet, but I will reserve final judgement for when they are dry and I can taste it all together.
