can you be a little more specific?

Are you wanting to do a 3D horse?
A horse carved out of a sheet cakes (2d)?
A piped buttercream horse?
Or even a horse made of fondant?

I don't have any directions handy, but your best bet will be to do a web search for Polymer Clay or Sculpey Clay Horse Directions. The concept is the same just a different medium to sculpt.

well this is a timely tread, I hope someone has some pointers, I have a request for a pink horse wearing a purple tiara & sparkly high heels!!!...It's for my grand-daughter so it has to be great....I'm thinking about 3D probably sitting & admiring her shoes because I can't figure out how to securely have it stand (no supports showing) AND wear high heels.

Anyone have suggestions?

hmmmmm taking a page from the duff handbook of cake support......
I would take some rather thick dowels (at least 1/2" in diameter) and put a board on top of that (foamcore doubled would work great for this) I would then attach the board on the dowels and the dowels to a bigger base board (ground etc.)
I would make it a short horse kinda like "my little pony" type. I would then attach another dowel set at an angle for the horses neck and head.
I would then mold the legs and the head itself out of krispy treats (rice krispy's) and use cake for the neck and the body, sculpted like a horse. I would use modelling chocolate to cover the body and the head and the legs and make a tail with it. Then gumpaste and or fondant for the details and the fiddly bits. That's for an entire cake made to look like a horse.
If you wanted to do a smaller horse, definitely would make an armature (skeleton) of wire and tinfoil and cover that with modelling chocolate (recipe right here on c.c.). That's how I made the horse for my 4th of july cake in my photos.
