Customer wanted a cake with pineapple filling, I was thinking about doing a pina colada cake. They're not really big on coconut. I still want to make the pina colada cake. My original plan was to do a white cake mix with pineapple juice as the liquid and Lorann's pc flavoring. Now I'm thinking of ways to use the pina colada but try to camouflage the coconut flavor for them just a little. I'm now thinking this

Pineapple cake mix (which they finally have in my supermarkets)
1/2 vanilla milk 1/2 pineapple juice
vanilla extract and pina colada flavor

bc- vanilla/pineapple

I know you can never go wrong with vanilla; do you think this would give the cake a good flavor? Can some tell me if the pineapple filling in the sleeve is good? TIA!

Dont know if this will help but when I make my pc cake i use a pineapple cake mix, pineapple filling(in sleeve, I really like it) and pc flavored bc icing. I think the pineapple cake and filling tone the coconut flavor down.

That sounds really good to me. But if your customer is not really too excited about the coconut, are you sure you really want to go with the pina colada and have to try to "hide" the coconut?

Not trying to be a downer, but I just want to make sure the customer doesn't end up unhappy. Maybe you could do exactly as you were planning - I like the idea of using the pineapple juice for your liquid - but omit the pc flavoring.

I agree. Pina colada cake sounds awesome...but not for someone who doesn't like coconut. I'd either go with pineapple or maybe yellow cake with the pineapple filling and icing.

I love pineapple but cannot stand pina colada. thumbsdown.gif

I don't want to sound mean, but if I ordered a pineapple cake I would not want anyone to make me the cake they want and then try to "hide" the pina colada flavor. I would be very disappointed if I could taste any pina colada flavor at all, in the cake or in the icing.

Again, I'm not trying to say your cake flavor doesn't sound good. I think it would be delicious for someone who liked pina coladas. For me, just give me pineapple cake and a strawberry daquiri, LOL!

OK, I should clarify. I used trhe term customer when in fact it's for my best friends bil's birthday. He's a sweetheart and everyone likes him. I'm doing this cake from me to him.

When I asked if they liked coconut they said not really then said they wouldn't want to eat an all coconut cake, filling or icing. I wanted to do something a little more than a pineapple cake (his wife makes pineapple upside down cakes alot). This is why I figured pineapple cake mix, juice and vanilla with the pc would tone down the coconut in the pc plus with the filling and the van/pin bc the coconut would barely be noticed. The vanilla would give it the twist.

I just had another thought...what about cream cheese icing? That goes well with pineapple I think.

I'm sure he will love whatever you make for him!

Good luck.

Thanks projectqueen! Like I said at the start, they only requested a pineapple filling. I was just trying to see what flavor complimented the filling and came up with pina colada (they never had pc cake before and they love my cakes). I needed to know how they felt about coconut (not everyone likes it). I thought since they wouldn't appreciate an all coconut flavor anything, a hint amongst all the vanilla and pineapple would be alright.

I think Cream Cheese icing can make anything delicious! Good Luck! It's fun to try new flavor combos!
