First Wedding Cake Need Help

I am doing my first wedding cake, and it happens to be for my cousin and I am in the wedding. Here is my delima. I am using a whipped ganache filling in both the wedding and grooms cake. Once put together, which will be Friday, do they need to stay refrigerated? The wedding is Saturday at 2, but I will have to be there most of the morning. What is the best way to do this? I know that when you refrigerate fondant it sweats. HELP!!

I would think you would want to keep it refrigerated from Friday to Saturday.

I have found that fondant sweats when it goes from a cold refrigerator to a warm room. If I cool my dining room very well with the air conditioner, I am able to take a cake from the refrigerator to room temperature on my dining room table without it sweating.

You just have to make temperature changes gradual, IMO.

I refrigerate all my cakes, better safe than sorry, when your fondant sweats just use a fan to dry it. It may take a while to dry completely. Make sure that no one touches the cake before the condensation dries or it may run and won't dry uniformly. I
