What is the best quality chocolate for truffles.I usually use Bakers but I'm sure that there is something better out there.

Callibeau is the chocolate we used all through school but I think the best is Valrohna its soo expensive though.

right now sams club has there ghiradelli melting chocolate!!!! here (alaska) it was 2.5 pounds for $6.82!!!!!!

I use callebaut in the school program, but at home I use ghiradelli. I LOVE ghiradelli chocolate and their dipping chocolate is fabulous (they are owned by the Lindt company--so how can you go wrong)

I like Gibraltor semisweet. Funny how we all have our own taste in chocolate, some people say they love Ghirardelli, and because I am from their hometown area I should be talking it up, but I don't like it. I find it too grainy.
