it depends on the recipe and the pan size . You should check your oven temp with a thermometer to see how off it is. You can eyeball it and check middle with a toothpick or touch the middle- when it springs back it's done.

until a toothpick stuck in the middle comes out mostly clean, not wet with cake batter or with big sticky crumbs. Little sticky crumbs are usually ok.

Time will vary depending on pan size a little bit, how much batter is in the pan, and your oven of course.

Do you have a thermometer for inside your oven so you can tell if it's running accurately?

Spend the $5 on an oven thermometer... the investment is well worth it, it saves so much frustration from burned or sunken cakes.

If you have a Wilton yearbook, there is a page in there that gives you the temperature and amount of time that each size of cake pan should bake. I have also found that in addition to the toothpick test, my cakes pull away from the side of the pan a little bit when they are completely done.

this technique i use has never failed me and it is so simply...

when you can smell your cake then it is a sure sign that it is cooked. i always wait til i can smell that yummy cake smell then i take a skewer and insert it in the centre and if it comes out clean then your cake is cooked.

the smell technique always works for me....
