Almond In The Bc Or Not?

I am making a large batch of BC to ice spice cakes and cheesecake flavored cake. I plan on filling them with thinned Cream Cheese Icing. Should I add almond extract to the BC or not? Does this combination sound good??

I think that almond would go great with the spice cake and the cheese cake.

I always add almond to all my BC. Just make sure no one has a nut allergy.

I started leaving almond out of all of my buttercream unless specificaly asked for! I am so scared to run into one of those nut allergy people. I want as many people as possible to try my products and so I try and make them accessible to everyone around!

I use almond flavouring all the time in my BC....love the flavour.....highly recommend it.

I don't put almond extract in anything. Just the smell of it totally grosses me out... I find more people don't like it than do. I almost always use a turbo-charged vanilla (I make it by scraping and putting the whole pod/seeds from a Tahitian vanilla bean in the large vanilla bottle).

I started out using almond and then quit because my kids did not like it. They are my best critics!!! I only use vanilla now.

I hadnt really thought about the nut allergy thing. I always use pure almond extract, so if you used imitation that wouldnt cause allergies would it? Just wondering.

Almond is a great flavor, but allergies can be an issue.

I love almond but I've run into a lot of people who do not like it. I used to put a little bit of almond flavoring into my buttercream (TINY bit) along w/vanilla and then I had someone ask what that taste was. I think if you don't like it, you REALLY don't like it.

Have you considered cinnamon buttercream? That's really good with spice cakes. Good luck!

Ooooh, good suggestion. I just made a slew of spice cupcakes and used maple buttercream on them (meringue style), but a maple cream cheese (add about a half or 3/4 C. REAL maple syrup to your cream cheese frosting recipe) would be deeevine, too.

I don't use the almond in my buttercream at all...I think the smell is weird also...and I didn't really like the taste of the BC the one time I used Almond. I also asked my grandmother who used to have a pretty big fan base around here years ago, for her cakes....and she said she Never used almond flavoring in her buttercream. It's just a personal prefrence I suppose.

But, to answer your question...I am with elvis....The cinnamon buttercream sounds really good!! And in my personal prefrence I would not add the almond flavoring...just plain old butter/vanilla flavor sounds like it would go great with those cakes too!

Thanks for all of the ideas guys! I had never thought about the nut allergy either. But I mean, yeah, I guess almonds are nuts!! icon_lol.gif

my son is nut allergic and I use artificial almond flavouring. Just make sure there is no real almond extract in it. I just tried adding almond flavouring to my buttercream and my hubby really liked it and i'm just not sure myself but am leaning more towards not liking it as much as vanilla.

I was told that artifical almond extract is OK for people with nut allergies but the pure almond extract is not OK. It pays to be safe with so many nut allergies out there, my daughter included.
