New molds need to be dusted with cornstarch or the gumpaste will stick. Fondant usually doesn't do well in molds.

Fill the molds completely, pushing the gumpaste into every crevice and then remove any excess lump. Immediately pop out the piece. It can either be used right away or allowed to dry before attaching to the cake. It depends on the size and the design.

If you have problems getting the paste to come out neatly, try putting it in the freezer for about 10 minutes. The piece should come out easily then.

Yeah, there is no easy way to use molds with gumpaste or fondant. As mentioned, use LOTS of cornstarch, I then turn it over and try to gently bash the mold on the bench to release. If that doesn't work I use a teensy spatula or you could use a fine probe to loosen a part of the fondant so you can grab one edge and gently pull the rest out.

The freezer option sounds good, which I might try next time. (but I'm too impatient)...

I use shortening in my moulds - never had a problem getting fondant/gumpaste out icon_biggrin.gif
