Rather than sculpting a hunter could you make the figures out of gumpaste or fondant? Are they expecting a 3-D cake or are you talking about sculpting a sheetcake?

I have made some humorous hunting scene cakes in the past, but this sort of sounds like what you mean. Here is a link to the 3 duck hunting cakes on my website

The toppers are from Wilton, the frosting is all buttercream. A more creative person than myself could make those things from fondant or gumpaste.
