I was a little scared of MMF when I first heard about it. But after trying it, I really like it and would like to use it for more of my cakes.

However, when I have made it, it seems like most of the people don't care for it. For the ghost cake I just did (picture is in my photos), I tried using orange extract, but that didn't seem to make a big difference. It's not that it wasn't edible, but there wasn't a whole lot of taste to it (I would have thought it would have been more like a circus peanut candy but no). Is there anyway to make MMF taste better so people will actually eat it? I would hate to make the effort to make it and have people just peel it off.

My feeling is that fondant is like the gift wrap on a present. Some people open the present carefully and save the wrapping, others just tear through it. But either way prettier wrapping make for a more appealing gift.

Same with MMF - some people eat it, some don't. But either way the cake can be so fabulous with it on! I just make sure I have great frosting underneath. I don't mind when they just peel it off.

Try using other flavored oils, maybe that will help. But not everyone will like the taste no matter what you do, but they will love the look!

Thanks for the replies. I've used vanilla extract for the first few times and orange extract this last time and it still didn't seem to do much to improve the flavor.

How much of the oils should I use? I know you would only want to use a few drops.

I used almond extract for the first time a couple weeks ago and people thought it was marzipan on the cake. It really made a difference. Maybe you need to add a little more of the orange. I also have used flavored coffee syrups in mine. Ya know like the Torani's or Davinci's.

Did you use the flavored coffee syrups in addition to the extract? And if so how much did you use?

No, not addition to, instead of. We have the pumps on the bottles and I use two pumps...so maybe like 4 TBsp. They're not as strong as extract so I added a little more.

Hi, the oils are much stronger than the extracts, so I would use about 1/4 of what the recipe calls for, say it calls for 2 tsp of extract, I would only use about 1/2 tsp of oil. HTH!! Oh and I agree with the almond extract/oil, it tastes sooooo good!!

I like Seewresults answer.

But you can put Rolledbutter cream mixed in with it .I think that it cuts down on the marshmallw taste. I like the taste better and most people like it and eat it . Belive me if my family didn't like it they would not have a problem telling me.
Good luck and I hope you find a mix or flavor that they like.
