I'm doing a football helmet cake for a groomscake in November and he wants it out of cheesecake!!! Is there a certain cheesecake recipe that will work well with carving and sculpting? I was thinking of just a basic cheesecake recipe that you bake in the oven. Then I thought about stacking the layers and chilling them and then carving/sculpting and keep it chilled once I'm finished thumbs_up.gif

Well, my professional opinion is don't do it. Sculpting cheesecake? Sounds like molding water.

But then I refuse to do cheesecakes for weddings anyway. I don't know how to get aroudnt the food safety issues.
