My daughter just got married last Sat. The bakery never left a box or instructions or any info about saving her top layer. I brought it home and froze it solid over nite then wrapped in saran wrap anf foil. Is that good enough? Any suggestions? Thank you!

So far so good with the wrapping, but I would suggest that you place the wrapped cake in a plastic container (like tupperware etc.) so that it doesn't accidentally get crushed by something else in the freezer bumping or icon_surprised.gif falling on it.! thumbs_up.gif

I also have a question about this (I'm doing my sis' wedding cake next Saturday and it's my first wedding cake). I read somewhere suggestions on either keeping the cake on the cakeboard or placing it on plastic. I can't remember which actually "flavors" the cake during long term storage. I am using regular cake boards for this cake so just wondered if that will work.

Also, it will be covered in MMF. Is it okay to leave the MMF on it or should I remove it before freezing?

The best way that I've found to freeze that top tier is to leave it on the cake board--cardboard--double wrap in saran wrap, wrap that in foil, place in cake box, double wrap that in saran wrap, then foil. I've had brides actually call and say their cake tasted great after a year--hard to believe!!!! I think the MMF will help keep the cake from freezer burn, but am not sure how it will taste--I've only done this with BC or ganache. Good luck!
