Did it turn out ok? i'm wondering...
I just met this couple and they are coming over to visit. After talking to her so much about cake, she tells me she wants to taste them. But wks later (this wk) she tells me she's Lactose intolerant. I told her i usually do my cakes with reg milk, and have no idea how it would work w/the other milk. She told me it's ok, she'll eat it this one time with the reg milk. I don't want her to feel sick either. They are traveling by train for about 1.5-2 hrs. I know i can use water, but i was wondering if it's ok to use Lactaid?
Also i make Chocolate mousse from scratch (hershey's recipe) it calls for Whipping/Heavy Creamy. Is there any way to get around that? I have to say i have tried the packs at the grocery store, but don't like them. I can't remember if it calls for milk or water though.

thanks!
Kat

Why don't you use the CoffeeMate Creamer in the jug. There is no milk in there and they taste good! It says on the bottle Lactose Free!

The creamer is a good idea, I didn't realize there isn't any milk in there!

My aunt bakes with Lactaid all the time. Everything turns out great! I am lactose intolerant, but bake with regular milk. I haven't had any problems with (eating) baked stuff, but that may just be me.

I also find the Lactaid pills to be the greatest invention in the history of mankind (well, since they figured out what "lactose intolerance" was).

As for the whipping cream (if your clients don't want to take lactaid pills), have you heard of the non-dairy Tip Top? It comes frozen in a carton, and whips up JUST like whipping cream! My mom swears by this stuff. I can't seem to find it on the internet...will have to look at the carton when I get home...

My mom is the same way. she can eat cakes w/reg milk and chocolate mousse and be ok. She doesn't take pills regularly to help, mom that is. So i thought maybe the lady is more sensitive to it than mom is. don't know!
I have never heard of tip top.
now that you mention it... i wonder if Dream Whip would work.

I make almost all of my baked goods with lactaid. Everything always comes out just fine and I can't tell the difference between that and regular milk in baked goods.
