I am new to cake decorating and have never had to freeze anything yet. I'm doing mini cupcakes for a wedding of 300 guest, 2 cupcakes per guest. I was hoping to start baking them early and freeze them, then just decorate them in one swoop.
Anyway, what is the best way to defrost. Should I do it in the fridge, or is on the counter fine? I could just pull them out of the freezer and start decorating can't I? How long do you think it will take them to defrost?

I personlly I freeze my cupcakes before i use them for an event and they are still nice and moist.
I'm not sure, I just read a thread on here about freezing cakes. Apparently it keeps them moist and saves some time if you can do it ahead of time. The cakes the defrosted in the fridge if I remember correctly.
Do you wrap each cupcake individually to freeze? Or in Ziploc bags?
