Hi,
I just made my first gumpaste and it is resting now. I followed the Wilton recipe to the T (or so I think) but I think there's something wrong with this gumpaste....it's all lumps. What did I do wrong? I tried kneading it but it's still crumbly. Can this be salvaged? I hope someone can give me the 101 on gumpaste. Thanks!

If the lumps are hard I doubt it can be salvaged. You might try kneading a small dab of shortening into the paste. Try Nic Lodges recipe, I think you will find it easy to make and much better to work with than Wilton's.

If you have some fondant (not Wilton) and tylose, you can make your own. Pettinice and Satin Ice are good commercial fondants. Take about 1 cup of fondant and knead in 2-3 tsp. tylose in small amounts until it is "tacky". Rub shortening all over it, wrap it twice in plastic wrap, and then place it in a an airtight container. Let it set over night. Cut or break off the amount you want to use immediately and knead it until pliable. Be sure to keep any unused gumpaste covered.

I suppose I can buy the Tylose at any cake supply store, right?

I have great results with wilton gumpaste my guess is you did not follow directions and were short on water.

knead in a bit more water start with 1t and add more if needed then if too sticky knead in a little powdered sugar it should be soft but firm and not sticky

after sitting overnight it will be hard so break off smallerpieces and knead,,,week old gumpaste works better than fresh store in the fridge.

about tylose - they might call it CMC - it's the same thing, just a different brand name.

Usually a cake supply store will have Tylose or CMC or you can order it on-line.
