I usually do a frosting type filling like this one:

2 c powdered sugar
8 oz cream cheese
1 t vanilla
4 T butter, softened

Mix until creamy and smooth.

definately a cream cheese filling. I did a spice cake with cream cheese filling a few months ago and not a scrap of it left.

I am in need of that same filling recipe and can not find it anywhere. I didn't save it in my recipe folder and am so upset at myself!!!!!!!!!

There was a post on this subject not too long ago....there were a lot of good ideas - do a search and I am sure it will bring them up. A few that come to mind were apple, caramel and variations of those two - I thought those sounded wonderful and were something different too!

If nuts are okay, then a praline filling is wonderful!

agagnier - I use a supped up box cake to make my spice cake and use a butterscotch frosting (I just melt half a bag of butterscotch chips, cool down and add to regular buttercream).

Here's the recipe - you can cut it in half if you need to because it makes (4) 9" layers or (2) 13x9x2 cakes or (1) 12x18x2 sheet cake or a lot of cupcakes.

Spice Cake

2 Duncan Hines Moist Deluxe Spice cake mixes
2-1/3 cups water
1 cup Crisco oil
8 large eggs
1 small box butterscotch instant pudding mix
1 small box butterscotch cook-n-serve pudding mix (usually right next to the instant)
1 envelope Dream Whip
2 Tbsp Apple Cider Vinegar (works better than plain vinegar)

Combine all ingredients. Beat for 3-4 minutes and then bake in a 350 degree oven for 20-30 minutes depending on which cake pan you used. Cake is done when you can stick a fork in the middle and it comes out clean.
