Hey All Veteran Mmf Makers - Question

I made my first batch of MMF last night and am letting it rest for 24 hours. But it got those little tiny grains of sugar as bitsy bumps. Is there anyway to get rid of them prior to using?

One more question: I need this batch white, but i the future should I add color? Do I kneed it in like I do regular Satin Ice?

And may I also say WOWWIE. I'm converted. Gonna keep making this stuff.

yes, knead in the color, sometimes I get those bits and they will knead out, sometimes I might have to pick some out, if you sift your sugar this willhelp with that problem. I love it too!

What recipe do you use?

I haven't tried making mmf...

What happens if you don't let it rest 24 hours?

Sounds like you didn't knead it long enough. You have to knead it for about 6-7 minutes with Crisco coated hands. Try taking it out and kneading it again. When you are done, make a ball and rub it with a coat of Crisco,wrap in plastic and put it in a ziplock bag. This will keep it from drying out.

You can add color the same way you do any other fondant. If it gets too soft add a little cornstarch mix with equal parts powdered sugar.

You can knead it in just as you would regular fondant OR if you need all one color you can put the color in with the melted marshmallows before the powder sugar. I get a more even color and not as much kneading.

Also, sifting the powdered sugar will help eliminate those lumps. And if you already have them--microwave for just a few sec. careful the center gets really hot--Then knead them out.
