When To Make Cakes?

Hello I'm new to the site and I have a question which i'm sure you all will be able to help me with. I;m making a 3 tier cake for my granddaughters birthday s saturday and I'm planning to use the white almond cake recipe, how many days in advance should I bake the cakes,8,10,12, thanks for any help~~~

Wedding's on Saturday? Make them Wed/Thur. you'll be fine, especially if you can get at least a crumbcoat of icing on them or apricoating/simple glaze just to "seal them up"

i used that recipe a month ago for a 3 tier wedding cake. i baked on thursday, wrapped them up, and decorated on friday to deliver saturday morning. hope this helps. i didn't crumb coat or do the simple syrup. they turned out great. i had read somewhere on here that the cakes should rest before stacking.

You can even bake today and freeze the cakes with BC icing in between the layers. Double wrap each 2-layer cake in saran wrap and foil, freeze, set out overnight Thurs. night still wrapped, allow to completely thaw, unwrap, and decorate on Fri. I do this a lot because I also work a full-time job! Otherwise bake on Thurs, decorate on Fri, have fun on Sat.!!!
