Royal Icing Help

I just made several batches of sugar cookies and iced them with Royal Icing (in my photos)only to find out the next day they were hard as a rock. Where did I go wrong? Did I use too much Meringue Powder, did I mix it to long? I've made this this same recipe before, the Wilton recipe, and did not have this problem. The cookies stayed soft, but not the icing!

Royal icing is supposed to dry hard. Maybe did you thin the last batch down thin enough to flood coat? The more water to meringue powder ratio will eventually keep the royal icing from hardening at all! Imagine my surprise to wake up after staying up until 3am and find my cookies were still wet!

Yes, I thinned it down, but maybe not enough. I also thought the icing, after it dried, smelled eggy.
