Does anyone have any suggestions on smoothing whipped icing? I always use viva paper towels with buttercream, but the whipped icing doesn't crust. I am afraid it will stick.

I have never used whipped icing before, so I don't know what the texture is but you could try using a warmed spatula to smooth it (I usually warm up a cup of water for about a minute and when the icing starts sticking to the spatula dip it again).

Hope that helps

I work at a grocery store bakery, and we use these;

I know this is from way back...but if you are still having problems getting your whipped topping smooth...
I spread the icing first and when it is finished except for the final smoothing, I take a really long spatula that will reach clear across a half sheet and make one clean swipe, just barely touching the icing, across the entire cake. Leaves it completely smooth. Keep that spatula really light though. You do not want it to dig into the icing. I do 30 cakes a day and this really works for me.

Once you've smoothed it, dont go back over it tho... it forms a skin and will "rip" if touched again (I used it for the first time yesterday). I did do my final smooth with a hot spatula and that helped.

I agree with BCJean, there's one more step I take and that's to run the spatula under warm water, but not leave it dripping wet.
