Ok odd I know... but my god daughter's fiance is really REALLY picky and a major jerk lmao. I have been asked to make a 2 layer Chocolate cake with BROWN Cream Cheese icing....

I posted in another thread about the brown icing... got some great tips on that. Thanks everyone!

Now I get a phone call asking how much it'll be so she can set it aside and make sure she has it before hand for me... she's such a great customer and god daughter lol. So she says "I was just asking Ry last night what types of cake he really likes and he said 'chocolate but it has to be light and airy and go down easy' can you do that Becky? is that possible?" She's a little bit of a ditzy child but we love her that way and wouldn't change her lol.

So now I'm here to ask yall experts! I need a nice recipe - perferably easy peasy maybe a box extender recipe - for a light and airy chocolate cake lol..... I think my regular chocolate cake is pretty good... and it goes down easy especially with a nice dollop of icing on each bite. But he's super picky and this is for their 2nd anniversary the end of this month so I want to make it perfect for her... Any ideas???

Thanks in advance!!!
Becky

The recipe I use for "light and airy" chocolate cake is called "Perfect Chocolate Cake" in the cake doctor book.

1 box devil's food cake
1 cup sour cream
1/2 cup oil
3/4 cup water
4 eggs
vanilla

Beat, scrape bowl, etc. Bake 20-25 minutes.

Thanks Shaina. 20-25 minutes doesn't seem like enough time though :-s... just worried it won't turn out right lol.... Wonderful easy recipe! And is a mix! Nothing easier! Thanks so much! Also how much vanilla???

Here's a tip to avoid getting a crust on the outside of the cake. Spray the pans with cooking spray and dust them with powdered sugar. I've only been doing this for a little while, but it really helps. I think the PS melts into the cake somehow. Hope this helps.

I've made this recipe before and it tastes great but I would consider it a heavier cake and not 'light and airy' (I thought sour cream tended to make a cake heavier and moister). But, maybe I did something wrong...?

This cake was very light when I made it. Not sure what sour cream is supposed to do, but it wasn't heavy at all. It could be the brand of cake mix. I used pillsbury.
