Crunchy Icing????

I'm new to decorating. I've only done birthday cakes for family and friends, i would like to get into wedding cakes...

i was at a wedding yesterday and the cake had a beautiful design. my boyfriend was eating a piece and said "i like my frosting crunchy like this". it really wasn't crunchy but had a hardened texture on the top, like crusted. how do i get this? i don't really make my own icings, i use the jar kind but if i could get my icing to do that, i would use a recipe. thanks!

try any of the crusting buttercream recipes out there. Wiltons basic decorating icing will form a nice crust and get crunchy like that.

It may have also been a Royal Icing which tends to have a harder texture.

This is my favorite Buttercream Recipe, and it is very versatile: (i'm pretty sure i got it from this site!)

1/2 cup cold water
1 tsp almond extract
1 tsp vanilla (clear is best)
1 tsp lemon juice
1 tsp butter flavoring
1 1/2 cups shortening
1/4 tsp butter flavored popcorn salt, if available
1 tbsp meringue powder
2 tbsp constarch
2 lbs powdered sugar


It never fails for me! If i'm making a cake with berries or other fruits, i like a creamier frosting so i use less powdered sugar, but I've made it with an extra few cups of sugar and it got a very nice "crunch" to it after it sit out a while! I've tried recipes that were a bit simpler and called for less ingredients, and basically any frosting is yummy to me but this is by far my favorite to work with!
