My Wilton instructor told us it would keep for six months in the freezer. I save my little "dabs" of colored icing and use them on future cakes, it makes the decorating go faster when I don't have to stop and color for small bits of color in my design. I label and put my leftovers in saran wrap and roll tightly, twist the ends and store them all in a large ziploc so it is easy to see what I have. They never seem to last for 6 months, so I don't have to worry about freshness.
