I love Duff. But does the lack of health standards in his bakery bother anyone else? Evey time I watch I think in good ol' Nebraska they'd shut him down. People wearing short shorts, comando kilts, and can anyone pull their hair back?!

No kidding! Not to mention the use of power tools in the same kitchen with sawdust and metal shavings going everywhere. He doesn't even bother to cover the cakes. The cakes that are made to be picked up by customers appear to sitting on the shelves for how many days?

It very surprising that someone hasn't come down on him hard from the health department.

That has bothered me also!!! My boyfriend told me I was being too picky and critical! Glad I'm not the only one!

And personally, I've seen ALOT of cakes on here that are a million times better than some of the stuff he comes up with! Sometimes, I think he is a bit too cocky to really give his cakes a good look and say "hey, that doesn't look right!"

There have been other threads about this topic as well. We have to remember that we aren't seeing everything that happens. We see them make 3-4 cakes in a half hour time. We don't know all the rules/policies...we don't know how long the cakes sit out (my cakes I make sit out overnight without being covered and are just fine)..etc..there's a lot of editing that goes on. I don't think it's fair to say there is a lack of health standards...we don't know what goes on there...only what we see in half an hour! Sorry...but if all they showed was people washing their hands, disinfecting the countertops, etc...would you watch?! They just show us the "cool" stuff..the rest hits the cutting room floor! Jodie

Extremely well put. I see alot on here where people like to jump to conclusions without getting the entire story.

There was no need to jump to conclusions when he lit up a blow torch to solder some copper tubing together with an uncovered cake less than 3 feet away.

The point of how long the cakes may be sitting is well taken. When the show is taped over an entire week and we see the same cakes sitting on the shelves, what conclusions are we supposed to make?

He has a great team that works for him and the ideas can be really original. It's just personal opinion about the use of power tools in the kitchen.

what would you be worried about the cake "catching" from the soldering? it's safe to breathe, so what would hurt the cake?

MD has some pretty tough health codes - you cant' bake out of your home here legally, that's for sure.

A hand-held or a stand mixer is a "power tool," by the way.

When using a blow torch to solder, flecks of metal and solder can fly. This is one reason goggles are normally worn when using the two. A solder gun would have been just as effective, probably easier, and less likely to have things flaking into the air.

Of course, you are right, a hand mixer is a "power tool". However, if it started sending metal debris into the air would you want it near your cake or anything else you might eat?

As a side note, yes I do know how to solder large and small components, I know which types of solder to use on which type of material, and I also know a little bit on how to weld. I have my own set of garage power tools and know how to use them quite well. Guess what, even though I use them to make things for cake, the tools stay in the garage.
