I hope someone who is online at this moment can tell me this. I have searched the forum but can not find an answer. How long can you store Buttercream?

I've kept it a week/10 days before I ran out and had to make more. I usually use it up in under a week, though.

Does it go bad? What part of it? I actually used some that had been stored for I know at least a month. Noone got sick and it still tasted pretty good. I used the Wilton recipe if that makes a difference. Oh and I don't make a habit of it, but my son was begging for a certain colored frosting and I found a tiny bit in the back of the fridge.

I use to keep it wrapped really really tight in the cabinet for a couple of months. Then found that the color starts to ooze out so now I keep my leftovers in my spare freezer. BC thaws really quickly.

depending on the recipe, some can sit at room temp for a month. Others need to be refrigerated within a couple of hours. It depends on the ratio of liquids to fat and sugar. Most buttercreams can be kept in the freezer for many months. Some need to be rewhipped (like meringue buttercreams) before using out of the fridge or freezer.

I use the Wilton recipe except I do half butter half veg. shortening and use milk in stead of water. When refrigerated I have used this buttercream recipe when it was about year old and it tasted fine and no one got sick.

I keep my BC that has 1/2 whipping cream and 1/2 half and half (all shortening) out on the counter for a day....but then I like to put it in the fridge, I know the sugar acts as a preservative but....Just to be safe....I have never frozen my bc due to I just make enough to use for the week.

JMO I don't keep anything frozen (meats, veggies, butter) for more than 6 months... not wanting to get jumped on I just always remember in the grocery store I worked at when I was a kid they always told us food DOES go bad in the freezer (wish my grandma knew that LOL).

I don't think food spoils in the freezer, just that the quality deteriorates. Nobody is going to get food poisoning from something because it sat in the freezer for 2 years. However, the taste and texture of that food will be poor.
