How Early Is Too Early?

I have an order for a stacked 9 / 6 - devils food w/buttercream - something using Strawberry shortcake - and I need to take it to work on Friday....the birthday is actually Saturday. How soon can I bake the layers for this cake without it drying out? I would like to bake them Wed night & decorate Thurs night. Is this too long before serving?

Just my opinion: I bake MAX of 2 days before an event. Eg. cake to be eaten on Saturday, I would bake no earlier than Thursday, and definitely on Friday if I didn't have a large number of cakes to do on that day.

That's just my opinion, however! I wrap all my cakes in a new trash bag and leave them overnight, usually. But once they're iced, they seem to be okay most of the time!

I'm sure you would still enjoy it on Saturday, no matter when you bake it! icon_smile.gif

You can bak your cake on Wednesday & decorate on Thursday. Make sure you wrap cake in saran wrap and a tight container. Then enjoy decorating it on Thursday and it will be ready for Friday. Happy BAKING!!!!!!!!!!!

I usually bake say the cake is due saturday. Bake Thursday decorate Friday. You would proIbably be ok to do what you planned but I would not put them in the fridge. That will dry them out.

Thanks! I usually pull an all nighter before I have to deliver a cake simply because I'm a freshness nut. I'll have to come up with a plan - maybe bake the cake Thursday before work....going to be a long day!

What if you baked the cake Thursday after work, and then got up early to decorate before work on Friday? You might be a little sleepy, but let's be honest...who really accomplishes anything on Friday anyway!?!
