Decorating By RachelC Updated 1 Nov 2006 , 2:39am by CupCake13
I'm trying to make a chocolate tiara- if only my Wilton chocolate melts will actually melt. I'm using a double broiler and it is just all clumped together! Not melting to the consistency needed! It has been on the double broiler for a half hour and nothings happening! I've melted chocolate before???Any suggestions!!!! Please help!!!! TIA!
I use the microwave to melt them...I have a squeeze bottle (no lid)that I bought at Bulk Barn...50% power for 1 min and then squeeze to mix and melt..it is pretty neat and works very well
It is specifically for melts but I have been wondering how safe the plastic is in the microwave.....
don't really know what you should do other than maybe scrape them into a bowl and try microwaving them??
Hope it turns out OK...
Have you been stirring the chocolate as it melts? If not, that may be the problem. It keeps its shape after it is melted. If you continue to heat after the chocolate is melted, it will seize, and become grainy and clumpy.
If you have been stirring, and it started to melt, and then got clumpy, it may have gotten water in it. Even the smallest amount of water will make the chocolate seize.
Sometimes, adding a couple of teaspoons of vegetable shortening will "unseize" it.

Maybe your chocolate is past its day. I've tried melting old Candy Melts to see if they could be salvaged, and they clumped up just like you described.
Try adding a tiny bit of shortening to the warmed chocolate melts...sometimes that saves old chocolate or helps to smooth it out more evenly.

Recently I've been having problems with the candy melts not melting right. It's like they've seized, but I micro on 50% power for 30 sec. at a time in a glass bowl. No water has gotten in them during the process. It's weird. Maybe I've gotten a few bad batches?
