I'm making a pumpkin cake and would like to frost it w/ a cream cheese frosting. I've found a bunch of recipes on here and am not sure which sound best... those using whipped cream, or conf. sugar, or granulated sugar. Who knew there were so many variations?! Anyone have a favorite they'd like to recommend?

I've used the crusting cream cheese icing before - my only problem is the other day it ended up being so soupy - it's fine on the cupcakes I frosted it with - but I'm worried now about putting it on my cake..... I'm going to make up another batch tonight to try..... unless someone else has a really great recipe here they want to tell us about! (see this is why we need comments on recipes - so we don't have to ask this question a million times - which is the best frosting, which is the best choc. cake...I hope the admins are working on this! icon_smile.gif )

I make the crusting cream cheese icing from this site and love it! My husband gets disapointed if I use BC now. icon_biggrin.gif

My recipe for cream cheese frosting is very easy and tastes great.

1 - 8 oz pkg. room temp cream cheese
1 cup butter, room temp
1/2 tsp salt
2 tsp. vanilla (clear or real)
2 lbs. powdered sugar

Cream the first 4 ingredients; mixing until smooth. Add powdered sugar; mix slowly until just combined and then beat on medium speed (heavy-duty mixer, high speed for hand mixer) for one minute.

This frosting is softer than regular buttercream, so unless you are in a cold climate, don't add any milk or 1/2 & 1/2. It also needs to be refrigerated.

I hope you like this one.

Michele

p.s. Adding 1/2 tsp cinnamon, 1/4 tsp allspice and cloves makes this a wonderful spiced frosting that would be great on your cake.

I've used the crusting cream cheese several times and it's great. It's easy to make too.
Good Luck.

An owner of a restaurant that was famous for their carrot cakes with cream cheese frosting told me all he did was mix cream cheese and powdered sugar. Very easy and if you would like you could add vanilla flavoring.

I really, really like the whipped cream (with cream cheese) frosting:

It's much lighter and less sweet than the traditional cream cheese frostings.
