That's weird, Quadcrew . Because I live in a warm, humid climate state (Florida) and none of my cakes have gone bad.

Where was the cake being kept? If it is indoors in an air conditioned place, it is okay. But if it is kept in a non air conditioned area, then of course, it will go bad.

This is my experience with scratch cakes. No cakes have gone bad on me yet. icon_wink.gif

I was also told by my Wilton Instructor that you cant decorate with Grocery Store frosting. Is this correct? I haven't tried it.

You mean the one that comes in the container? I think its way too sweet, so it would be best to make it yourself. Plus, you would have to buy lots of those little containers to frost bigger cakes... icon_wink.gif

My instructor said that the consistency of those frostings isn't sturdy enough to do most decorations and that it ultimately wouldn't hold up.
